MEAL PLAN FOR WEEK OF 4/13-4/19

I had every intention of having the pictures and cost like I did last week but failed in that regard over the weekend. We had a very busy weekend, and I just lost track of everything. So unfortunately for this week, I will just be providing the menu and recipes/notes. I will try my best to keep track a little better over this holiday weekend and the upcoming week.


As a side note for this week’s menu, we ended up grilling out and eating out a few times over the weekend, so we did have quite a few leftovers. Also, my family will be in town for the weekend to celebrate Easter.

RECIPES/LINKS/MEAL NOTES

SOCCER STADIUM

  • I won tickets for the Sporting KC game on April 13th. We knew we would eat while we were there. We ordered some popcorn chicken and curly fries.

FROZEN CHICKEN & MASHED POTATOES

  • “Just Bare” chicken nuggets

    • Just cooked using traditional oven instructions

  • 4 oz package of Idaho Instant Mashed Potatoes - Four Cheese

    • Just cooked using stovetop instructions

SPAGHETTI, GARLIC BREAD, CAESAR SALAD KIT

  • 1 24oz jar of spaghetti sauce

  • 1 lb ground beef

  • 1 lb spaghetti noodles

  • 1 box of frozen, Texas style garlic bread slices

    • Just cooked using traditional oven instructions

  • 1 salad kit - Caesar

    • Just mix the ingredients together that come in the bag

  • For my spaghetti, I just brown the ground beef and drain. I then add the sauce in the same pan as the ground beef and heat it until hot. Then mix in the al dente noodles. We serve it with grated parm and shredded cheese.

AMBROSIA SALAD

  • I followed the graphic below.

SANDWICHES & CHIPS

  • We did deli turkey and Colby jack slices with individual bags of chips.

BAKED BALSALMIC CHICKEN

POTATO AND GREEN BEAN CASSEROLE

CORNER CAFE

TACOS, FRESH SALSA, & GUAC W/CHIPS

  • Tacos: We just brown ground beef and drain it. Add a packet of taco seasoning mix and a can of chili beans. Heat until hot.

  • Fresh Salsa: I used the recipe in the link below

  • Corn and avocado salsa - kizactivelife

  • Guac w/chips: I just bought the mild guac at Walmart and ate it with Doritos.

I apologize for not having pictures or costs this week. It ended up being a busier week than we expected so I got lost in all of the chaos.

We will be working through leftovers all during the week of 4/20 - 4/26 so I will not have a meal plan post that week. See you the week of 4/27-5/3!
